  2. Brown Chorizo with olive oil.

  5. Simmer for at least 90 mins until lentils are tinder.
  6. Add chopped kale and cook for another 30 mins.

When cool enough to handle, cut chorizo into slices. Stir in the kale and nutmeg. Add the wine to deglaze the pot, stirring and scraping up any browned bits from the bottom.
